Fermentation is biology on a thermostat: yeast activity roughly halves for every 8 °C the kitchen drops. A dough that doubles in 6 hours at 24 °C can want 9 or 10 in a winter kitchen.
Set the temperature and your recipe's baseline; the curve shows the expected rise. It is a planning model — the poke test still outranks the clock.
